Grape slices with mascarpone cream

  • 150 g Butter
  • 275 g Cantuccini (Italian almond biscuits)
  • 3 sheets Gelatine
  • 600 g blue and green grapes
  • 500 g Low-fat curd
  • 500 g Mascarpone
  • 1 package Vanillin sugar
  • 7-10 Tbsp Juice of 1 lemon
  • 120 g Sugar
  • 35 g Chocolate shavings
  • 7-10 Tbsp Oil

Directions

    Melt the butter and let it cool down a little. Finely crumble 250 g cantuccini. Mix the crumbs with the butter. Lightly brush the bottom of a square springform pan (24 x 24 cm) with oil. Pour the crumb mixture into the tin and press to a flat bottom.

    Chill for about 30 minutes. Soak gelatine in cold water. Pluck the grapes from the stalks, wash and drain well. Mix quark, mascarpone, vanillin sugar, lemon juice and sugar. Squeeze the gelatine and dissolve in a small pot. Stir in 4 tablespoons of mascarpone cream, then stir into the remaining cream. Fold in approx. 500 g grapes and chocolate shavings and spread on the bottom. Chill the cake for about 3 hours. Cut the remaining grapes in half. Crumble the cantuccini.
