  • 7-10 Tbsp Ingredientsfor approx. 4 portions:
  • 2 packages (200 g each) Tortellini with ricotta-ham filling (refrigerator)
  • 7-10 Tbsp Salt
  • 1 (approx. 400 g) Cucumber
  • 1/2 bunch Spring onions
  • 1 (approx. 900 g) Cantaloup melon
  • 1 collar Herbs for green sauce
  • 4 TABLESPOONS Vinegar
  • 1 TEASPOON Mustard
  • 1 TABLESPOON Lemon juice
  • 7-10 Tbsp Pepper
  • 4 TABLESPOONS Oil
  • 150 g Smoked salmon in slices

    Cook the pasta in boiling salted water according to the instructions on the packet. Drain, rinse with cold water and allow to cool. Peel the cucumber, quarter it lengthwise and cut into pieces.     Mix vinegar, mustard, lemon juice, salt and pepper. Fold in the oil. Place tortellini, spring onions, melon, cucumber, herbs and salmon in a bowl and drizzle with vinaigrette
