Summer salad with lime and mint

Ingredients

Servings: 4
  • 5 Tomatoes
  • 2 red and yellow peppers
  • 1 Cucumber
  • 3 red onions
  • 1 collar flat leaf parsley
  • 4-5 Stem(s) Mint
  • 3 Limes
  • 7-10 Tbsp salt, pepper, brown sugar
  • 5 TABLESPOONS good olive oil

Directions

    Wash the tomatoes, quarter them, remove the seeds and finely dice the flesh. Clean and wash the peppers and dice them just as finely. Wash and finely dice the cucumber. Peel and finely dice the onions. Wash herbs, shake dry, pluck off leaves and cut into fine strips.

    Wash organic lime in hot water, dry it and peel or finely grate the skin with a julienne lime nipper. Squeeze all limes and measure approx. 100 ml juice. Mix juice, salt, pepper and 1 teaspoon sugar.

    Add oil underneath.

    Mix tomatoes, peppers, cucumber, onions, herbs, lime zest and lime vinaigrette well. Leave to stand for approx. 30 minutes. Season again with salt, pepper and sugar. Serve.
