Melon chutney

Ingredients

Servings: 2
  • 7-10 Tbsp (à 400 ml):
  • 1300 g (800 g pulp) Honeydew melon
  • 250 g red onions
  • 1 TABLESPOON Mustard seeds
  • 2 TEASPOONS pickled green pepper
  • 1 knife tip Preserving aid
  • 250 g Sugar
  • 150 ml White wine vinegar
  • 1 TEASPOON Salt
  • 1/2 TEASPOON Pepper
  • 1-2 TABLESPOONS Curry
  • some stem(s) Thyme

Directions

    Remove the seeds from the melon, remove the flesh from the skin and dice. Peel and finely dice the onions. Put melon, onions, mustard and peppercorns, preserving aid, sugar, vinegar, salt, pepper and curry in a pot and bring to the boil while stirring. Let it thicken for about 30 minutes, stirring from time to time. Pluck thyme leaves and add. Pour immediately into the prepared glasses and close them
