Meatball soup with noodles and carrot julienne

Ingredients

Servings: 4
  • 1 Carrot (approx. 150 g)
  • 1/4 collar Chives
  • 100 g short noodles
  • 7-10 Tbsp Salt
  • 150 g Pork sausage
  • 1 TEASPOON frozen herb mix
  • 7-10 Tbsp Pepper
  • 600 ml Vegetable broth

    Peel and wash the carrot, cut it in half crosswise and cut into fine strips. Wash chives, shake dry and cut into fine rolls. Prepare noodles in boiling salted water according to package instructions

    Knead the ground pork with the herb mixture and season with salt and pepper. Form the ground pork into 8 small balls. Bring the stock to the boil, let the meatballs simmer for about 5 minutes and add carrot strips after about 3 minutes. Drain the noodles and add to the soup. Fill the soup into small bowls and sprinkle with chives. Delicious with baguette
