Maultaschen salad with roasted onion steak

Ingredients

  • 1 pack of (400 g) vegetarian "Maultaschen
  • 1 l Vegetable broth
  • 6 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON Mustard
  • 1 TABLESPOON Honey
  • 8 TABLESPOONS Sunflower oil
  • 2 Spring onions
  • 150 g Carrots
  • 100 g Rocket
  • 4 Hoof steaks (approx. 150 g each)
  • 1 Onion
  • 2 TABLESPOONS Flour
  • 7-10 Tbsp Aluminium foil

Directions

    Prepare Maultaschen in vegetable stock according to the instructions on the packet. For the vinaigrette, whisk vinegar, salt, pepper, mustard and honey. Add 4 tablespoons of oil drop by drop. Clean and wash spring onions and cut into fine rings.

    Peel, wash and roughly grate the carrots. Wash the rocket and shake dry. Wash meat, dab dry and season with salt. Heat 2 tablespoons of oil in a frying pan. Fry the steaks for 6-10 minutes, turning them over, depending on taste.

    Peel onion, cut into rings, season with salt and turn in flour. Remove the finished Maultaschen from the stock. Use the rest of the stock for other purposes. Cut Maultaschen into strips and marinate them with the vinaigrette.

    Remove the finished steaks from the pan, wrap them in aluminium foil and let them rest. Put 2 tablespoons of oil in the pan and fry the onion rings while turning. In the meantime, mix all the prepared salad ingredients. Arrange steaks, onion rings and salad on plates.

    Season steaks with pepper.
