Marinated beef steaks with potato and feta cheese salad

Ingredients

  • 4 Stem(s) Sage
  • 400 ml dark ale
  • 3 TABLESPOONS Maple syrup
  • 7-10 Tbsp black pepper
  • 1 TEASPOON Sweet peppers
  • 8 Flap steaks (approx. 100 g each)
  • 800 g Potatoes
  • 1 Onion
  • 150 ml Vegetable broth
  • 5 TABLESPOONS White wine vinegar
  • 1 TEASPOON medium hot mustard
  • 5 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 5 Stem(s) Thyme
  • 1 small head radicchio salad
  • 2 Spring onions
  • 150 g Sheep's cheese
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Oil
  • 7-10 Tbsp Aluminium foil

Directions

    Wash sage, dab dry, remove leaves and cut into strips. Mix beer, syrup, pepper, paprika and sage. Place the steaks in the marinade and marinate for approx. 1 1/2 hours, turning the meat occasionally. Wash the potatoes and cook in boiling water for about 25 minutes. Peel and finely dice onion. Bring the onion cubes, stock, vinegar, mustard and oil to the boil, season with salt and pepper.

    Let simmer for about 3 minutes. Drain the potatoes, rinse briefly under cold water and peel. Cut potatoes into slices. Pour hot marinade over the potatoes and leave to stand for at least 1 hour. Wash the thyme, dab dry and remove the leaves. Clean and wash the radicchio and pluck roughly into pieces. Clean, wash and cut spring onions into rings. Crumble cheese. Remove the meat from the marinade, strip off. Brush grill pan with oil, heat strongly. Add meat in 2 portions and fry on both sides for about 2 minutes.

Take out, season with salt and pepper. Wrap the meat in aluminium foil and let it rest for about 5 minutes. In the meantime add thyme, radicchio, spring onion and feta cheese to the potato salad, season to taste with salt, pepper and sugar. Arrange salad and steaks on plates

    Drizzle meat with approx. 100 ml marinade and fry for another 1 minute. Take out, season with salt and pepper. Wrap the meat in aluminium foil and let it rest for about 5 minutes. In the meantime add thyme, radicchio, spring onion and feta cheese to the potato salad, season to taste with salt, pepper and sugar. Arrange salad and steaks on plates
