Greek noodle salad with lamb and minced steaks

Ingredients

Servings: 4
  • 1 pack of (400 g) frozen lamb medallions
  • 200 g Kritharaki (Greek noodle speciality)
  • 7-10 Tbsp Salt
  • 200 g Tomatoes
  • 100 g pickled peppers
  • 1 can(s) (425 ml) broad beans
  • 6 TABLESPOONS Wine vinegar
  • 7-10 Tbsp Pepper
  • 1 TABLESPOON + 1-2 Tsp Senf
  • 1 TABLESPOON Honey
  • 6 TABLESPOONS Olive oil
  • 1 Shallot
  • 100 g black olives with stone
  • 2 Onions
  • 100 g Cucumber
  • 1 bunch of parsley
  • 1 Garlic clove
  • 250 g Greek cream yoghurt (10 % fat)
  • 400 g mixed minced meat
  • 1 egg (size M)
  • 4 TABLESPOONS Breadcrumbs
  • 4 TABLESPOONS Milk
  • 200 g Sheep's cheese
  • 1 Roman salad heart

Directions

    Defrost lamb medallions in the refrigerator overnight according to package instructions. Prepare pasta in boiling salted water according to package instructions. Wash, clean and roughly dice the tomatoes. Cut pepperoni into rings, except for something to garnish. Pour beans into a sieve and rinse. For the salad dressing, whisk vinegar, salt, pepper, 1 tablespoon of mustard and honey. Add 4 tablespoons of oil drop by drop. Peel the shallot, cut into fine cubes and stir into the vinaigrette. Drain the pasta and rinse with cold water. Mix the pasta, tomatoes, olives, pepperoni, beans and salad dressing and leave to stand. Peel 1 onion. Wash and clean the cucumber. Grate cucumber and onion roughly. Wash parsley, shake dry, pluck the leaves from the stalks and chop them, except for something to garnish. Peel garlic and press it through a garlic press. Mix cucumber, onion, garlic, parsley, except for a little bit for garnishing, and yoghurt. Season to taste with salt and pepper. For the meatballs peel the remaining onion and cut it into fine cubes. Knead minced meat, diced onion, egg, breadcrumbs, milk and 1-2 tsp. mustard. Season with salt and pepper. Form minced meat into 8 meatballs. Heat 1 tablespoon of oil in a frying pan. Fry the meatballs in portions for about 8 minutes while turning. Heat 1 tablespoon of oil in a second pan and fry the defrosted lamb steaks for approx. 6 minutes, turning them over. In the meantime, clean and wash the romaine lettuce, shake dry and cut the leaves into strips. Crumble feta cheese. Season pasta salad with salt and pepper, mix in romaine lettuce and feta cheese. Arrange tzatziki, meatballs, steaks and salad. Sprinkle with parsley and garnish with parsley and pepperoni
