Wash the potatoes well and cook them covered in water for about 20 minutes
Stir the sour cream, quark and lemon juice until smooth. Season with salt, pepper and sugar
Clean the cucumber and peel, wash if necessary. Quarter lengthwise and remove seeds. Cut cucumber into slices. Wash dill, dab dry and cut finely. Wash apples, cut off some slices for garnishing if necessary. Core the rest, cut into thin slices. Mix cucumber, apples, dill and quark dip
Quench the potatoes and remove the skin. Dab the matie fillets. Arrange matie, potatoes and apple-cucumber dip on salad if desired. Garnish with apple slices if desired.
