Marinated strawberries with semolina

Ingredients

  • 1/8 l milk (1,5 % fat)
  • 10 g Durum wheat semolina
  • 7-10 Tbsp pulp of 1/4 vanilla pod
  • 7-10 Tbsp Sweetener
  • 1 egg (size S)
  • 200 g Strawberries
  • 3 tablespoons (10 g each) Orange juice (freshly squeezed)
  • 1 tsp (5 g) Pistachio kernels for sprinkling
  • 1 stalk of lemon balm

Directions

    Boil 100 ml of milk. Sprinkle in semolina while stirring and allow to swell slightly. Season to taste with sweetener and let it cool down a bit. Separate egg. Mix egg yolk with 25 ml milk, stir into the semolina.

    Beat the egg white until stiff, fold into the semolina. Wash, clean and halve the strawberries. Mix strawberries, orange juice, vanilla pulp and a few drops of sweetener. Wash lemon balm, pluck leaves from the stalk, cut into strips and add to the strawberries.

    Arrange the strawberries in a bowl. Pour a little semolina foam on top. Sprinkle with pistachios and decorate with melissa. Serve the rest of the semolina foam sprinkled with pistachios separately.
