Marinated Mairübchen with Sbrinz

Ingredients

Servings: 4
  • 2 Mairübchen (without green à approx. 450 g)
  • 4 TABLESPOONS white balsamic vinegar
  • 1 pinch Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 6 TABLESPOONS Rapeseed oil
  • 1 collar Chives
  • 1 collar Radishes
  • 150 g Rocket
  • 4 Salad leaves (e.g. lollo blanche)
  • 100 g Sbrinz cheese

Directions

    Mairübchen clean and peel. Chop the turnips into fine slices. Mix vinegar with sugar, salt and pepper. Stir in oil in a thin stream. Wash chives, dab dry and cut into fine rings.

    Stir the chives into the marinade. Mix Mairübchen with the marinade and let it stand. Wash the radishes and put some smaller ones aside for garnishing. Clean the rest and cut into sticks.

    Wash the rocket, dab dry and sort. Wash and clean the salad and pluck a little smaller. Slice Sbrinz into wafer-thin slices. Mix the radish and rocket with the fairy tubs. Season to taste with salt and pepper.

    Arrange salad leaves on plates. Spread marinated fairy tails on them. Sprinkle with cheese. Garnish with set aside radishes.
