Wash the ribs and pat them dry. Carve the chillies lengthwise, remove seeds and chop finely. Mix mustard, brown sugar, vinegar and chilli vigorously. Brush the ribs with the mixture and let them simmer covered. Grill over medium heat for 12-15 minutes. Wash and dry chops.
Peel garlic and press it through a garlic press. Mix olive oil, lime juice and zest and garlic. Marinate meat with it. Grill over medium heat for 12-15 minutes. Serve with grilled tomatoes and peppers
