Marinated chicken skewers with tomato salsa

Ingredients

Servings: 4
  • 1 big red chili pepper
  • 2 Garlic cloves
  • 50 ml + 2 tablespoons olive oil
  • 1 TEASPOON Coriander seed
  • 2 Chicken fillets (approx. 300 g each)
  • 300 g Tomatoes
  • 1 (approx. 175 g) Courgette
  • 4 spring onions (approx. 30 g each)
  • 1 TEASPOON Sugar
  • 7-10 Tbsp coarse sea salt
  • 7-10 Tbsp freshly ground pepper
  • 16 wooden skewers
  • 7-10 Tbsp Cling film

Directions

    For the marinade, wash the chilli, rub dry and chop coarsely. Peel garlic and chop coarsely. Finely puree 50 ml oil with garlic, chilli and coriander. Wash the meat, dab dry and cut into thin oblong slices.

    Mix the meat with the marinade, cover and chill for about 30 minutes.

    In the meantime, wash the tomatoes, grate them dry, quarter them, cut out the core and stem ends. Finely dice the flesh. Wash and clean the zucchini and cut into fine cubes. Leek onions clean, wash, shake dry and cut into fine rings.

    Mix tomatoes, zucchini, spring onions, 2 tablespoons of oil and sugar. Season to taste with salt and pepper. Cover and chill.

    Take the meat out of the marinade, place on skewers and season with salt. Fry the skewers in portions in a hot grill pan for about 2 minutes on each side. Arrange skewers with tomato salsa on a plate.

    Sprinkle with some pepper.
