Macaroni with minced bacon and tomato sauce (a la Amatriciana)

Ingredients

Servings: 4
  • 100 g streaky smoked bacon
  • 2 Onions
  • 3 Garlic cloves
  • 1-2 TABLESPOONS Oil
  • 500 g mixed minced meat
  • 2 TABLESPOONS Tomato paste
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Cayenne pepper
  • 1 can(s) (850 ml) Tomatoes
  • 400 g Pasta (e.g. macaroni)
  • 2-3 stem(s) Parsley

Directions

    Finely dice the bacon. Peel and chop the onions. Peel garlic and chop finely. Leave the bacon out in a large pan and take it out. Put oil in the pan, heat it up and crumble the minced meat into it.

    Sauté vigorously while turning. Add the onions and garlic and fry briefly. Stir in tomato paste. Season with salt, pepper, sugar, paprika and cayenne pepper. Deglaze with tomatoes, chop tomatoes a little with a spatula.

    Bring to the boil, cover and stew for about 8 minutes. In the meantime prepare noodles in boiling salted water according to package instructions. Wash parsley, shake dry and cut into fine strips.

    Mix the bacon with the sauce. Season again with salt, pepper, sugar, paprika and cayenne pepper. Pour the noodles into a sieve, quench briefly, drain. Mix the noodles into the minced sauce, heat up again and arrange on plates sprinkled with parsley.

    Grated gouda cheese tastes good with it.
