Lime sorbet

Ingredients

Servings: 8
  • 300 g Sugar
  • 6–7 Limes
  • 1 Protein (size M)
  • 8 Slices of lime
  • 7-10 Tbsp Mint

Directions

    Bring 450 ml of water and sugar to a short boil while stirring. Leave to cool. Squeeze limes, measure 200 ml. Mix sugar water and lime juice, pour into a metal bowl and allow to cool. Place in the freezer and freeze for about 2 hours. Beat the egg white until stiff.

    Stir the frozen mixture, fold in the beaten egg white. Let it freeze for about 3 hours, stirring occasionally. Form cams from the mixture with 2 tablespoons and freeze again for about 30 minutes. Arrange in pre-cooled glasses on lime slices. Decorate with mint
