Lilac Berry Vanilla Jelly

Ingredients

  • 2 kg Lilac Berries
  • 1 package (1 kg) Gelling sugar 1:1
  • 7-10 Tbsp thinly peeled rind of 1/2 organic lemon
  • 7-10 Tbsp Juice of 1 lemon
  • 1 TEASPOON ground vanilla pod

Directions

    Wash the lilac berries and put them dripping wet with stems in a large pot. Put a lid on it and let it boil quietly at medium heat for 20-25 minutes. Pass the lilac berries through a fine sieve or cloth. measure 750 ml juice, let it cool down

    Put juice and jam sugar in a pot, add lemon zest, juice and vanilla and mix well. Bring everything to a boil over high heat while stirring constantly and let it boil for about 4 minutes (jelly test!) while stirring

    Take the pot off the stove. Pour hot jelly into clean, sterile glasses. Close them immediately and turn them upside down for about 10 minutes. Turn the jars upside down again and let them cool
