Light mini apple pancakes

Ingredients

Servings: 4
  • 25 g Butter or margarine
  • 2 small apples
  • 2 TABLESPOONS Lemon juice
  • 1 egg (size L)
  • 40 g Sugar
  • 1 pinch Salt
  • 200 ml Buttermilk
  • 200 g Flour
  • 1 1/2 TSP. Baking Powder
  • 1 TEASPOON Oil
  • 200 g light vanilla quark (0,2 % fat)
  • 3-4 Tsp gelled cranberries

Directions

    Melt the fat and let it cool down. Wash apples, cut out cores. Cut apples into slices of about 1 cm thickness. Sprinkle slices with lemon juice. Mix egg, sugar and salt.

    Stir in buttermilk and liquid fat. Mix flour and baking powder and stir into the mixture. Spread a coated pan thinly with oil and heat it up. Put 4 tablespoons of dough as 4 round cakes into the pan.

    Press one apple ring in the middle and fry on medium heat for 2-3 minutes on each side until golden brown. Remove from the pan and keep warm. Bake 4 more pancakes in portions from the remaining dough with a little oil.

    Add the quark and cranberries.
