Wash the potatoes thoroughly and cut into slices. Heat the oil in a pan. Fry the potato slices in it over a low to medium heat, turning occasionally, for 10-15 minutes until the slices are soft.
##Tomatoes## wash, clean and add after about half the time. Season with salt and pepper. ##Sage## wash, shake dry and chop large leaves roughly. Add sage to the potatoes 1-2 minutes before the end of the cooking time.
Mix quark and aiwar and season with salt, pepper and possibly some sugar.
