Cut the bacon into fine strips. Peel and finely chop the onion. Heat 1 tablespoon of oil in a frying pan, add onion and bacon and fry in it. Deglaze with wine and let it boil down for about 5 minutes. Remove from heat, stir in mustard and honey.
Add 2 tablespoons of oil and season to taste with salt and pepper. Clean and wash salads and pluck into bite-sized pieces. Arrange salads in a bowl. Drizzle with the warm marinade. Serve immediately
