Lentil stew with bacon and cooked sausages

Ingredients

Servings: 4
  • 1 medium onion
  • 2-3 stem(s) fresh thyme (alternatively 1 tsp dried thyme)
  • 4 (approx. 750 g) Pears for cooking
  • 2 TABLESPOONS Oil
  • 150 g lean smoked bacon
  • 1 (approx. 600 g) bunch of greens
  • 250 g Dish lenses
  • 4 cooked sausages (approx. à 75 g)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1/2 bunch Parsley

Directions

    Peel and chop the onion. Wash the thyme and shake dry. Wash the pears. Heat oil in a pot and fry bacon and onion lightly. Pour on 2 litres of water, add pears and thyme and bring to the boil.

    Cover and simmer at low heat for about 30 minutes. Clean and wash the soup greens. Dice carrots and celery, cut leek into rings. Lift pears out of the stock, add lentils and soup vegetables and cook covered for another 30-40 minutes. 10-15 minutes before the end of the cooking time, add cooked sausages and cook along. Season lentil stew with salt and pepper, remove bacon and cooked sausages and add the pears again. Heat the pears in the stew for about 5 minutes. Cut bacon and cooked sausages into slices. Wash parsley, shake dry and chop. Arrange stew in deep bowls with one pear in each bowl.

    Note: Beans are cooked separately as they become brown and unsightly when cooked with the lentils
