Tortano - Italian pizza bread

Normal pizza bread is often too dry. The Italians know a trick and simply roll it up! This makes's wonderfully juicy and spicy.

  • 10 g fresh yeast
  • 1 str. tbsp. sugar
  • 400 g + some flour (Type 550)
  • 7-10 Tbsp Salt
  • 8 TABLESPOONS Olive oil
  • 1 big red pepper
  • 1 (approx. 300 g) Courgette
  • 1 big onion
  • 2 Garlic cloves
  • 1 TEASPOON dried thyme
  • 7-10 Tbsp Pepper
  • 150 g Hard cheese (e.g. Comté; piece)
  • 125 g Mozzarella
  • 200 g cooked ham in wafer-thin slices
  • baking paper
  • 6 Stem(s) Parsley
  • 4 Stem(s) Thyme
  • 1 collar Chives
  • 500 g Edible quark (20 % fat)
  • 6-8 TABLESPOONS Milk
  • 7-10 Tbsp salt, pepper

Directions

    For the pizza ring, mix yeast and sugar in a small bowl until the yeast is liquid. Mix 400 g flour and 1 heaped tsp salt. Add 3 tablespoons oil, yeast and approx. 1⁄4 l lukewarm water. Knead first with the dough hooks of the mixer, then with your hands to a smooth yeast dough.

    Cover and leave to rise in a warm place for about 45 minutes.

    Clean, wash and drain the peppers and zucchini. Dice the bell peppers, cut the zucchini into thin slices. Peel onion and garlic, dice finely. Heat 2 tablespoons of oil in a large frying pan. Fry the bell pepper, zucchini, onion and garlic for about 10 minutes while turning.

    Stir in the thyme. Season with salt and pepper and let it cool down.

    Grate cheese. Drain mozzarella, dice finely. Dab dry again (see picture above left). Knead the yeast dough briefly and roll out to a rectangle (approx. 30 x 60 cm) on some flour.

    Cover the dough with ham, leaving an approx. 2 cm wide edge on the long sides. First spread the vegetables on the ham, then the cheese on top. Brush the edges of the dough with water all around.

    Cut bread into cubes. Heat 4 tablespoons of oil in a frying pan and fry the bread cubes while turning them into croutons. Season with salt and pepper. ##Peel garlic and onion and cut into fine cubes.

    Place the pizza ring on a baking tray lined with baking paper. Dust with some flour and sprinkle with approx. 3 tbsp. oil. Place in the preheated oven (electric cooker: 225 °C/circulating air: 200 °C/gas: see manufacturer) and immediately heat to 200 °C (circulating air: 175 °C/gas: see manufacturer).

    For the quark, wash the herbs, shake dry, chop or cut into fine rolls. Mix quark, milk and herbs. Season to taste with salt and pepper. Arrange the pizza ring with spring quark.
