Clean and wash the Brussels sprouts and remove the individual leaves. Cook the noodles in boiling salted water according to the instructions on the packet, add the brussels sprouts in the last two minutes
Peel and finely dice the shallots. Heat 1 tablespoon of oil and sauté the shallots. Add mascarpone and milk and heat while stirring. When the sauce is smooth, stir in the lemon peel and juice. If the sauce is still too thick, stir in some pasta cooking water. Season with sugar, salt and pepper
Wash the fish, dab dry and cut into cubes. Heat 2 tablespoons of oil in a coated frying pan. Fry the fish for 3-4 minutes while turning. Season with salt and pepper. Drain the pasta, drain and mix with the sauce. Serve with salmon and garnish with lemon
