Wash the lemon thoroughly, grate dry and finely grate the peel. Halve the lemon, squeeze one half. Mix butter, lemon zest, 2 tbsp lemon juice, a good 1/2 tsp salt and approx. 1 tsp fresh coarsely ground or ground black pepper with the whisks of the hand mixer. Season to taste with salt and pepper
Put butter on a piece of parchment paper and form into a roll. Chill for about 1 hour. The butter also goes well with fish, lamb or vegetables
