Ingredients

  • 325 ml Milk
  • 250 g Flour
  • 3 Eggs (size M)
  • 1 pinch Salt
  • 7-10 Tbsp grated rind of 1 untreated lemon
  • 1 TABLESPOON Lemon juice
  • 1 package Vanillin sugar
  • 75 g Sugar
  • 50 g crushed almonds
  • 250 g Low-fat curd
  • 250 g Whipped cream
  • 1 TABLESPOON Icing sugar
  • 7-10 Tbsp clarified butter
  • 7-10 Tbsp Lemon slices

Directions

    Warm up the milk a little. Put flour in a mixing bowl, make a depression in the middle, add eggs and salt. Add the lukewarm milk while stirring constantly and mix to a smooth dough. Put the dough in a cool place for about 20 minutes. In the meantime, mix lemon zest, lemon juice, vanillin sugar, sugar, almonds and quark to a creamy mixture. Whip cream until stiff and fold into the quark mixture in portions. Put the mixture in a cool place. Heat clarified butter in a pan and bake 12 thin pancakes one after the other at medium heat until golden brown. Layer the pancakes alternately with the cream to form a tower. Dust with icing sugar. Serve with lemon slices as desired
