Wash the Kasseler, dab dry well and season with pepper. Peel, wash and halve the potatoes. Peel onion, cut into large pieces. Spread the vegetables on a fat pan. Put the smoked pork loin on a grid and slide it over the vegetables. Cook in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for about 1 hour. In the meantime wash, quarter and core the apples.
Halve the apple pieces. Clean the fennel, cut into slices, cut off the stalk ends. Strip rosemary needles from the stalk. Add apples, fennel and rosemary to the fat pan. Season vegetables with salt, pepper and rosemary. Pour 1/2 litre of water over the roast, finish cooking for another 20-30 minutes
