Kasseler in puff pastry

Ingredients

Servings: 9
  • 200 g Onions, 1 bay leaf
  • 2 Cloves
  • 1 TEASPOON black peppercorns
  • 1.8 kg tripped chop of Kasseler
  • 500 g Mushrooms
  • 1/2 bunch parsley, 2 tablespoons butter
  • 7-10 Tbsp salt, pepper, nutmeg
  • 450 g Frozen puff pastry (6 pcs.)
  • 1 egg, 2-3 tablespoons breadcrumbs
  • 1 TEASPOON Whipped cream or milk
  • 1 (200 ml) Bottle of Cumberland sauce
  • 1 Orange, baking paper

Directions

    Boil plenty of water. Peel onions. Cover one with laurel, cloves, peppercorns and smoked pork in the water and cook it for about 45 minutes

    Finely dice the rest of the onions. Clean the mushrooms, wash if necessary and chop finely. Wash and chop parsley. Steam onions in hot fat until transparent. Add mushrooms and fry until the liquid has evaporated. Add parsley. Season with salt, pepper and nutmeg. Let cool off

    Defrost the dough sheets one by one. Take out the meat and let it cool down. Place 5 pastry sheets on top of each other and roll out to a size of approx. 35 x 35 cm on a little flour. Separate the egg. Brush the edges of the dough with some egg white. Sprinkle the middle of the dough plate in the size of the Kasseler with breadcrumbs. Put the mushroom mixture on top, place the Kasseler on top with the curvature downwards. Whip into the dough, press the ends well. Place it with the seam side down on a baking tray lined with baking paper

    Roll out the rest of the pastry sheet slightly thinner and cut out the flowers. Spread some of them with the rest of the egg white and garnish the roast with it. Bake in a hot oven (electric cooker: 225 °C/ convection oven: 200 °C/gas: level 4) for approx. 30 minutes

    Whisk the egg yolk and cream. 8-10 minutes before the end of the baking time, spread the puff pastry with it. Brush the remaining pastry blossoms with the same mixture and place on the baking tray. Bake everything ready

    Fill Cumberland sauce e.g. in orange baskets and arrange everything
