Ingredients

  • 200 g + some flour
  • 7-10 Tbsp Salt
  • 100 g cold + some butter
  • 50 g Diabetic sweetness
  • 1 Egg (Gr. M)
  • 600 g pitted peaches
  • 2 TABLESPOONS Lemon juice
  • 2 TABLESPOONS crushed almonds
  • 100 g Apricot Jam
  • 1 tablespoon (20 g) Pine nuts

Directions

    Knead flour, 1 pinch of salt, fat in pieces, sweetness and egg to a smooth dough. Cover and chill for about 30 minutes.

    Cut peaches into thin slices and sprinkle with lemon juice. Roll out the dough on a little flour until round (approx. 30 cm Ø). Line a greased tart tin with a removable base (26 cm Ø).

    Spread the almonds on top. Place the peaches in a fan shape in the mould.

    Bake the tart in a preheated oven (electric cooker: 200°C/ convection oven: 175°C/gas: level 3) for approx. 30 minutes. After approx. 15 minutes, remove from the oven, spread with jam and spread with pine nuts.
