Ingredients

  • 1 small bottle (0,33 l) of dark beer (e.g. Guinness)
  • 500 g Dish lenses
  • 400 g sprung Kasselernacken
  • 1 collar Soup Greens
  • 500 g waxy potatoes
  • 6 Debrecziner sausages (approx. 50 g each)
  • 2 TEASPOONS dried thyme
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Thyme

Directions

    Mix beer and 330 ml water. Soak the lentils in this mixture for about 2 hours until all the liquid has been absorbed. Cover the cured pork in a large pot with water and slowly bring to the boil, add the lentils and simmer for about 15 minutes. In the meantime, peel or clean and wash the soup greens. Cut leek into rings, carrots into slices and celery into cubes. Peel potatoes and cut into cubes. Cut sausage into slices.

    Add potatoes, dried thyme, sausage and carrots to the pot and continue cooking for about 5 minutes. Remove the cured pork loin and let it cool down a little. Add celery and leek to the pot and continue cooking for 5-7 minutes. In the meantime, dice the pork loin and put it back into the pot, warm it up again. Season the lentil pot with salt, pepper and a little sugar. Arrange in preheated bowls and garnish with thyme
