Baked Beans Mediterranean style

Ingredients

  • 250 g dried large white beans
  • 2 Onions
  • 2 Garlic cloves
  • 2 TABLESPOONS Olive oil
  • 1 can(s) (850 ml) Tomatoes
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 1/2 bunch flat leaf parsley
  • 150 g Feta cheese

Directions

    ##Soak the beans## overnight in 1 1/2 l of cold water or see tip on the top left.

    The next day boil the beans in soaking water, cover and simmer for 1 1/2-2 hours until they are soft.

    ##Peel and finely dice onions and garlic. Heat oil in a pot. Brown onions and garlic in it. Deglaze with tomatoes and juice. Bring to the boil and crush the tomatoes finely.

    Cover and simmer for about 10 minutes. Season to taste with salt, pepper and sugar.

    Preheat oven (electric cooker: 200°C/circulating air: 175°C/gas: level 3). Wash parsley, shake dry and cut into strips. Drain the beans. Mix with parsley and tomato sauce.

    Divide into four small ovenproof moulds or one large mould. Crumble the cheese on top. Bake in a hot oven for 8-10 minutes. Flatbread tastes good with it.
