Dice the ham. Peel, wash and finely dice the carrot. Peel and chop onion. Clean and wash spinach
Fry the ham, carrot and half of the onion in 1/2 teaspoon of hot oil in a frying pan. Add the spinach and fry. Seasoning
Whisk eggs and milk, season. Pour over the vegetables. Cover and let stand for 10-12 minutes
Fry the rest of the onion in 1/2 teaspoon hot oil until transparent. Add tomatoes and simmer for about 5 minutes. Season to taste with salt, pepper and sugar. Serve the tomato sauce with the omelette
