Wash the potatoes and cook for 15-20 minutes. Then rinse with cold water, peel and leave to rest. In the meantime peel onions and cut them into slices. Wash the chives and cut into small rolls.
Cut the cold cuts a little smaller. Cut the potatoes into quarters or halves, depending on size. Heat oil. Fry the potatoes and onion slices until crispy. Season with salt and pepper. Mix in turkey slices and chives and serve.
