Grilled tomato and peach salad

Ingredients

Servings: 4
  • 1.5 kg Tomatoes (e.g. beef tomatoes, yellow cherry tomatoes, green black and curly tomatoes)
  • 3 Peaches (about 150 g each)
  • 9 TABLESPOONS Olive oil
  • 125 ml light balsamic vinegar
  • 2-3 TABLESPOONS Honey
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6-8 Stem(s) Basil
  • 50 g Parmesan cheese
  • 12 discs South Tyrolean ham (approx. 8 g each)
  • 7-10 Tbsp dark balsamic cream

Directions

    Wash and clean the tomatoes and, except for the cherry tomatoes, cut them into thick slices or wedges, depending on their size. Wash the peaches, grate them dry, cut them in half, remove stones and cut the flesh into slices

    Heat 1 tablespoon of oil in each portion in a grill pan. Grill the tomatoes in it in 4 portions while turning, remove. Grill the peaches, also turning them and take them out. Clean the grill pan if necessary in between

    Mix vinegar, honey, salt and pepper. Emulsify 5 tablespoons of oil. Wash basil, shake dry, pluck leaves from the stalks, put some leaves aside for decoration. Chop basil finely

    Arrange the tomatoes and peaches in a large flat bowl. Drizzle the vinaigrette evenly on top. Slice some parmesan cheese on top. Sprinkle the salad with basil, garnish with some ham and basil leaves. Sprinkle with balsamic cream if desired. Add the rest of the ham and the parmesan
