Grilled salmon in orange-soy marinade

Ingredients

Servings: 4
  • 1 untreated orange
  • 400 ml Orange juice
  • 2 TABLESPOONS demerara sugar
  • 2 TABLESPOONS Miso paste
  • 1-2 TABLESPOONS Soy sauce
  • 1 TABLESPOON Rice wine vinegar
  • 4 Salmon fillets (approx. 180 g each)
  • 2 Spring onions
  • 7-10 Tbsp Salt

Directions

    ##Orange## wash hot, rub dry and grate peel. Bring orange juice and peel to the boil with the sugar in a pot and reduce to about half of its original size while stirring. Stir in miso paste and continue to boil for about 1 minute. Remove the pot from the heat, stir in the soy sauce and vinegar and let it cool down. ##Wash the fish and dab dry. Remove some marinade and put aside. Let the fish steep in the remaining orange marinade for about 15 minutes.

    Clean and wash spring onions and cut them diagonally into thin slices. Cut the orange into slices. Remove the salmon, season with salt and grill on the hot grill for about 4 minutes. Turn, brush with marinade and grill for another 4 minutes. Arrange the finished salmon, sprinkle with some marinade, sprinkle with spring onions and serve with orange slices. Serve with grilled ##baguette## or ciabatta
