Grilled minced skewers with curry sauce

Ingredients

  • 1 can(s) (236 ml) Sliced pineapple
  • 1 TABLESPOON roasted peanuts
  • 2 discs Toast
  • 500 g mixed minced meat
  • 1 egg (size M)
  • 1 TABLESPOON Ketchup
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp Cumin
  • 200 g Long grain rice
  • 1 TABLESPOON + 1 tsp butter
  • 1 coated tbsp. flour
  • 1 TEASPOON Curry
  • 250 ml Vegetable broth (instant)
  • 1 TABLESPOON Fresh cream
  • 1 TABLESPOON Oil
  • 2 stem(s) Parsley
  • 100 g frozen peas
  • 8 wooden skewers

Directions

    Place wooden skewers in cold water. Drain the pineapple and collect the juice. Cut the pineapple into small pieces. Coarsely chop the peanuts. Peel the toast and soak in cold water. Knead minced meat, egg, ketchup and squeezed bread.

    Season with salt, pepper, paprika and cumin. Press approx. 60 g minced meat around one skewer each and chill. Prepare rice in boiling salted water according to package instructions. Melt 1 tablespoon butter in a small pan.

    Stir in flour and curry with a wooden spoon and sweat for about 3 minutes. Carefully stir in the stock and 5 tablespoons of pineapple juice until smooth and simmer for about 3 minutes while stirring. Stir in crème fraîche and season with salt, pepper and possibly some curry.

    Drain and cover the rice. Heat the oil in the pan and fry 4 skewers evenly all around for about 10 minutes. Keep the finished skewers warm and do the same with the other 4 skewers. Wash the parsley, dab dry and remove the leaves.

    Melt 1 teaspoon of butter in a saucepan, cover and cook the peas for 5-6 minutes. Mix the peas with the rice. Add pineapple and peanuts to the sauce and bring to the boil again. Arrange 2 skewers and some sauce on each pea rice and garnish with parsley leaves.
