Ingredients

  • 1 bagel from the day before
  • 40 g Sheep's cheese
  • 1 Onion
  • 325 g mixed minced meat
  • 1 Egg
  • 1/2 Teas of ground caraway
  • 1/2 TEASPOON dried oregano
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground pepper
  • 300 g Pork escalope meat
  • 4 (à 75 g) Lamb chops
  • 1 Garlic clove
  • 1/2 bunch Thyme
  • 4 TABLESPOONS Olive oil
  • 7-10 Tbsp grated peel and juice of 1/2 untreated lemon
  • 7-10 Tbsp wooden skewers
  • 500 g Tomatoes
  • 1/2 Vegetable Onion
  • 3 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 3 TABLESPOONS Olive oil
  • 300 g Whole milk yoghurt
  • 2 TABLESPOONS Lemon juice
  • 1 Garlic clove
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Olive oil
  • several sheets Rocket salad
  • 7-10 Tbsp Lemon corners
  • 7-10 Tbsp black olives
  • 7-10 Tbsp flat leaf parsley

Directions

    Soak rolls in water. Cut cheese into cubes. Peel and finely dice onion. Knead minced, squeezed out roll, onion, egg, caraway, oregano, salt and pepper. Form four oval meatballs from the minced mass. Press a piece of cheese into the middle of each.

    Cut pork into thin strips and put them on skewers. Wash the lamb chops and pat them dry. Peel garlic and cut into thin slices. Pluck thyme leaves from the stalks. Mix oil, garlic, thyme, lemon peel and juice, salt and pepper. For the salad, wash and clean the tomatoes and cut them into thick slices. Peel onion and cut into large cubes. Mix vinegar with salt and pepper, add oil. Mix tomatoes, onion and marinade. Mix yoghurt and lemon juice. Peel garlic, crush and add. Season to taste with salt and pepper.

Brush the skewers and chops with the garlic and thyme oil in between. Arrange the meatballs, skewers and lamb chops with the tomato salad on romaine lettuce leaves on a plate. Garnish with lemon wedges, olives and parsley

Brush the skewers and chops with the garlic and thyme oil in between. Arrange the meatballs, skewers and lamb chops with the tomato salad on romaine lettuce leaves on a plate. Garnish with lemon wedges, olives and parsley
