Dissolve yeast in 125 ml of lukewarm water. Put flour, egg, 1 pinch of salt and oil in a bowl. Add the yeast mixture and knead with the dough hooks of the hand mixer to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes
Cut the dough in half. Roll out dough balls on a floured work surface (approx. 25 cm Ø) and place on 2 baking trays lined with baking paper. Cover and leave to rise for a further 20 minutes. Cut ham into strips. Wash the tomatoes, dab dry and cut in half. Remove the sausage from the skin and cut into slices
Spread pizzas with tomato sauce, cover with olives, tomatoes and sausage, drizzle with pesto. Grate cheese, spread on top. Bake the pizzas one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 25-30 minutes until brown. Clean, wash and drain the rocket
Remove the finished pizzas and sprinkle with rocket. Cut the pizzas into pieces and serve
