Peel the shallots and slice or cut into fine rings. Wash, clean, quarter, seed and finely dice the tomato. Peel garlic and cut into thin slices. Wash the thyme and pluck the leaves. Chop nuts coarsely
Mix oil, thyme, garlic, tomato, nuts and shallots. Arrange the goat cheese on a plate. Spread herb oil over it. Leave to stand for at least 30 minutes. Serve with crispy white bread
