Gnocchi mince pan with sweet potatoes

With the right ingredients, gnocchi and minced meat can make it big! And although the pan is ready in only 25 minutes, it tastes simply delicious. The perfect under-the-week dish.

Ingredients

Servings: 4
  • 500 g Sweet potatoes
  • 4 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g cherry tomatoes
  • 1 Onion
  • 1 Garlic clove
  • 1/2 bunch flat leaf parsley
  • 500 g minced beef
  • 1 pck (400 g each) Gnocchi (cooling shelf)
  • 1 TABLESPOON Tomato paste
  • 1-2 TEASPOONS Harissa (e.g. paste)
  • 100 g Schmand
  • 150 g Fresh goat cheese

Directions

    Sweet potatoes peel, wash and in approx. 2 cm large cubes cut. Heat 2 tablespoons of oil in a very large frying pan. Fry the potato cubes all around at medium heat for 8-10 minutes. Season with salt.

    Meanwhile wash and halve the tomatoes. Peel and finely chop the onion and garlic. Wash parsley, shake dry and chop coarsely. Remove the potato cubes and put them aside.

    Heat 2 tablespoons of oil in hot frying fat. Fry the minced meat in it until crumbly. Add onion, garlic and gnocchi and fry for about 2 minutes. Add tomatoes, tomato paste and harissa (caution: hot!), sweat briefly. Season with salt and pepper. 1⁄4 l Stir in water and sour cream, bring to the boil. Fold in potato cubes, heat up again. Sprinkle with goat cheese flakes and parsley.
