Gebrüder-Rudolph preserves

Ingredients

  • 1/4 l Orange juice
  • 1 kg Cranberries (fresh or frozen)
  • 500 g Gelling sugar (2 : 1)
  • 1/2 Vanilla pod
  • 1 piece(s) (approx. 20 g) Ginger
  • 1 red peppers
  • 7-10 Tbsp Salt

Directions

    Reduce the juice to about half its original volume and allow to cool. Wash fresh cranberries, drain (thaw frozen ones) and chop roughly. Mix with sugar and juice in a pot.

    Cut the vanilla pod lengthwise and scrape out the pulp. Peel ginger and chop finely. Clean the peppers, cut them in half lengthwise, remove the seeds and wash them. Chop the pepperoni finely.

    Boil the cranberries while stirring. Continue to boil for about 4 minutes while stirring. Mix about half the fruit mass with vanilla pulp and fill into hot rinsed twist-off glasses. Stir ginger, pepperoni and 1⁄2 tsp. salt into the rest of the fruit mass.

    Bring to the boil briefly. Also pour into hot rinsed twist-off glasses. Close the jars and place them on the lid for about 5 minutes. Turn them over and let them cool down.
