Peel, wash and roughly grate the carrots and celery. Peel onion and garlic, dice finely
Heat the oil in a pot. Fry the minced meat in it until crumbly. Add carrots, celery, onion and garlic and fry for about 10 minutes. After about 5 minutes add tomato paste. Season everything with salt and pepper, add tomatoes. Chop the tomatoes with a spatula, stir in the stock, bring to the boil, simmer for about 20 minutes
Wash oregano, shake dry, remove leaves except for something to garnish, pluck from the stalks and chop. Prepare pasta in boiling salted water according to package instructions. Season minced sauce with salt and pepper, stir in oregano. Arrange noodles and minced sauce, garnish with oregano and sprinkle with pepper
