For the vinaigrette, whisk vinegar, salt, pepper, mustard and honey. Add oil drop by drop to the vinaigrette. Clean and wash the spring onions, cut into rings and stir into the vinaigrette.
Clean, wash, spin dry and pluck the salad. Pears wash, quarter, remove core. Cut pears into thin slices
Arrange salad, pears and cured pork and sprinkle with vinaigrette. Tastes good with wholemeal rye bread
