Roast the oat flakes in a pan without fat while turning them golden brown. Take out and let cool down
Mix quark with soured milk, lemon peel and juice until smooth. Stir in half the jam. Season quark cream with sugar
Pour the quark cream into 4 dessert bowls. Pour a blob of the remaining jam on each quark. Sprinkle with the oat flakes and decorate with lemon balm as desired
Tip: For adults you can add a dash of cherry liqueur or brown rum. Instead of the crunchy oat flakes, a roasted muesli mixture also tastes great
