Fried tofu with ratatouille

Ingredients

Servings: 4
  • 1 big onion
  • 1-2 Garlic cloves
  • 125 g small tomatoes
  • 2 Peppers (e.g. yellow and red)
  • 1 medium zucchini
  • 1 medium-sized aubergine
  • 3-4 Tbsp Oil (e.g. olive oil)
  • 1 package (200 g) strained tomatoes
  • 1 TEASPOON Vegetable broth
  • 7-10 Tbsp salt, white pepper
  • 200 g Couscous (coarse durum wheat semolina)

Directions

    Peel and chop the onion and garlic. Clean and wash the vegetables. Cut tomatoes into slices, dice remaining vegetables

    Fry the onion and garlic in 1 tablespoon of hot oil. Add the diced vegetables and steam. Stir in strained tomatoes, 1/4 l water and stock. Bring everything to the boil, season and simmer covered for about 8 minutes

    Pour 200 ml of boiling water over the couscous in a bowl, add salt. Cover and allow to swell for approx. 2 minutes (or see package instructions)

    Dab the tofu dry. Cut into 4 thick slices. Cut out stars if necessary. Fry in 2-3 tablespoons of hot oil on both sides until golden brown

    Add the tomatoes to the vegetables and heat for about 2 minutes. Season to taste with salt and pepper. Serve with tofu and couscous
