Steak with orange-pepper sauce

Ingredients

  • 400 g green beans
  • 7-10 Tbsp Salt
  • 1 (450 g) Bag of frozen almond balls
  • 4 Beef fillet steaks (approx. 150 g each)
  • 1 medium onion
  • 150 g Mushrooms
  • 1 TEASPOON + 1 tablespoon of oil
  • 7-10 Tbsp Pepper
  • 1/8 l Milk
  • 40 g Whipped cream
  • 1 Bag preparation for "Sauce Hollandaise" (makes 1/4 l sauce)
  • 60 g + 10 g butter
  • 3-4 Tbsp Orange juice
  • 1 TABLESPOON pickled green peppercorns
  • 8 discs Bacon
  • 7-10 Tbsp Thyme, orange peel and split

Directions

    Clean and wash the beans and cook them in boiling salted water for about 15 minutes. Drain the beans. Put almond balls on a baking tray lined with baking paper. Bake in the preheated oven (electric cooker: 225 ° C / gas: level 4) for 18-22 minutes.

    Turn around after 12 minutes. Wash meat and pat dry. Peel and chop onion. Clean, wash and slice the mushrooms. Heat 1 teaspoon of oil. Fry onion and mushrooms until golden brown.

    Season with salt and pepper. Take out, keep warm. Heat 1 tablespoon of oil in the frying fat. Fry the meat for about 5 minutes on each side, season. Warm up milk and cream. Stir in sauce powder and bring to the boil.

    Add 60 g butter in pieces and melt in it while stirring. Add orange juice and peppercorns. Season sauce with salt and pepper if necessary. Put the beans in 8 bundles and wrap 1 slice of bacon around each.

    Heat 10 g butter and fry all around. Arrange meat with sauce and mushroom-onion mixture. Add almond balls and bean bundles. Garnish with thyme, orange peel and orange wedge.
