Stuffed baked apple in Calvados honey sauce

Ingredients

  • 40 g Almond slivers
  • 150 g Marzipan raw mass
  • 30 g Icing sugar
  • 1 pinch Cinnamon
  • 40 g Raisins
  • 4 TABLESPOONS Calvados
  • 4 sour red-baked apples (approx. 170 g each)
  • 7-10 Tbsp Juice of 1 lemon
  • 250 ml apple juice
  • 2 Star anise (coarsely crushed)
  • 1 spread tablespoon of firm light honey
  • 1 heaped tablespoon of cornflour
  • 7-10 Tbsp Icing sugar

Directions

    Lightly roast the almond slivers in a pan without fat, remove. Knead marzipan, icing sugar, cinnamon, almond slivers, raisins and 2 tablespoons of Calvados. Wash apples and grate them dry.

    Cut off upper quarter. Punch stars into the apples with a small cookie cutter and hollow them out with a small knife. Lightly hollow out apples from the inside with a ball cutter. Squeeze lemon and sprinkle the apples (+ lid) with plenty of lemon juice from the inside and outside.

    Pour the marzipan mixture into the apples, place on a baking tray and bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 20 minutes. Add the apple lids only the last 5 minutes.

    Meanwhile boil up 200 ml apple juice, star anise and honey. Stir 50 ml apple juice, 2 tablespoons Calvados and starch until smooth. Stir the mixed starch into the boiling apple juice and simmer for about 2 minutes, stirring occasionally.

    Arrange apples on the Calvados honey sauce and dust with icing sugar.
