Fried tofu with couscous salad

Ingredients

Servings: 4
  • 250 g Couscous
  • 7-10 Tbsp Salt
  • 1 bunch of parsley
  • 4 Stem(s) Peppermint
  • 1 small radicchio
  • 150 g pitted olives (e.g. green and black)
  • 1 Garlic clove
  • 4-6 Tbsp Lemon juice
  • 5 TABLESPOONS Olive oil
  • 7-10 Tbsp Pepper
  • 400 g smoked tofu
  • 1 Egg
  • 2 TABLESPOONS Sesame
  • 8 TABLESPOONS Breadcrumbs
  • 2 TABLESPOONS Flour
  • 200 g Whole milk yoghurt

Directions

    Mix the couscous and 1 teaspoon salt. Pour over 1⁄2 l of boiling water. Cover and let it swell for about 20 minutes, loosening several times with a fork.

    Wash and chop the herbs. Clean and wash the radicchio and cut into thin strips. Cut olives into rings. Peel garlic and chop finely. Mix prepared ingredients, lemon juice, 3 tbsp. oil and couscous.

    Season to taste with pepper and salt if necessary.

    Cut tofu into 4 slices and season with salt and pepper. Whisk the egg. Mix sesame and breadcrumbs. Turn the tofu in flour, egg and breadcrumbs one after the other. Heat 2 tablespoons of oil in a large frying pan.

    Fry the tofu on both sides at medium heat for about 5 minutes. Season yoghurt with salt and pepper. Arrange everything.
