Lukewarm red cabbage salad

Ingredients

  • 700 g Red cabbage
  • 2 Oranges
  • 300 g Celery
  • 120 g Shallots
  • 6 TABLESPOONS Oil
  • 6 TABLESPOONS Wine vinegar
  • 100 ml Orange juice
  • 3 TABLESPOONS Honey
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 200 g Goat's cheese taler
  • 75 g Walnut kernels
  • 7-10 Tbsp Celery green and orange slices

Directions

    Remove outer red cabbage leaves. Cut cabbage into slices, removing the stalk. Cut cabbage into fine strips. Peel oranges so that the outer white skin is completely removed.

    Cut out the fillets from the parting skins. Clean, wash and cut the celery into fine pieces. Peel shallots, cut into slices. Heat oil. Sweat red cabbage in it while turning. Add shallots.

    Mix vinegar, orange juice and honey. Season with salt and pepper. Stir into the red cabbage, let it stand for a short time. Season if necessary and serve in portions with celery and orange filets. Slide the goat cheese taler briefly under the hot grill and serve with the salad.

    Sprinkle with chopped walnuts. Serve garnished with celery green and orange slice. Delicious with baguette.
