Fried schnitzel with two sauces

Ingredients

Servings: 4
  • 3-4 Stem(s) fresher or
  • 1 TEASPOON dried thyme
  • 1 Garlic clove
  • 4 TABLESPOONS Salad Mayonnaise
  • 7-10 Tbsp grated rind and
  • 7-10 Tbsp Juice of 1/2 unflavoured lemon
  • 7-10 Tbsp salt, white pepper
  • 1-2 TABLESPOONS pickled green
  • 7-10 Tbsp Pepper
  • 4 Apricot halves (tin)
  • 4 TABLESPOONS Ajvar (preparation
  • 7-10 Tbsp from peppers; glass)
  • 2 TABLESPOONS ketchup, 1 egg
  • 4 Pork cutlet (approx. 150 g each)
  • 4 TABLESPOONS Flour
  • 4 TABLESPOONS Breadcrumbs
  • 3-4 Tbsp Oil

Directions

    Wash the thyme, pluck it. Peel garlic and chop finely. Mix both with mayonnaise, lemon peel and juice. Season to taste with salt and pepper

    Coarsely chop the green pepper. Dice the apricots. Mix both with ajvar and ketchup. Season to taste

    Whisk the egg. Wash the schnitzel, dab dry, tap flatter if necessary and halve. Season. Turn first in flour, then in egg and finally in breadcrumbs. Fry in hot oil for 3-4 minutes on each side. Serve with the sauces. Served with: French fries and a mixed salad

    Ajvar (also Aiwar) is a mild paprika-vegetable puree from the Balkans. It tastes great with meat and fish. Also great for refining tomato sauces
