Fried rice with green Thai asparagus

Ingredients

Servings: 4
  • 300 g Jasmine rice
  • 7-10 Tbsp salt, pepper, sugar
  • 1 small red chili pepper
  • 2 medium-sized onions
  • 2 Garlic cloves
  • 300 g green baby Thai asparagus
  • 2-3 TABLESPOONS Oil
  • 2 TABLESPOONS Soy sauce
  • 2 TABLESPOONS Fish sauce

Directions

    Wash the rice until the water is clear. Boil rice in 600 ml salted water and cook according to package instructions

    Wash the chilli and cut into very thin rings with the seeds. Peel onions and garlic. Dice onions finely, chop garlic very finely. Cut the lower ends off the asparagus. Wash the asparagus and cut into pieces of about 3 cm length.

    Heat the oil in a wok or large frying pan. Fry the chilli, onions, garlic and asparagus over medium heat for 1-2 minutes while stirring. Add rice and fry briefly. Season to taste with soy sauce, fish sauce, sugar and possibly salt and pepper
