Fresh strawberries with sherry foam

Ingredients

  • 1 kg Strawberries
  • 4-5 Tbsp + 100 ml sherry (medium)
  • 4 (80 g) go. tablespoons of sugar
  • 1-2 stem(s) fresh mint
  • 2 fresh egg yolks (Gr. M)

Directions

    1. carefully wash, clean and quarter or halve the strawberries. 4-5 tablespoons sherry and 1 go. Tbsp. sugar over the strawberries and mix in. Cover the strawberries and let them stand for at least 30 minutes

    Wash mint, pluck off leaves and cut into fine strips

    Egg yolk, 3 go. Whisk the sugar and 100 ml sherry with the whisk of the hand mixer in a hot water bath for 6-8 minutes until thick and creamy. Arrange the strawberries with the sherry foam and the mint strips
